Wild Blueberry Chia Oatmeal

Wild blueberries are frozen fresh and loaded with 33% more brain-healthy anthocyanins (a type of flavonoid) and 2x the antioxidant capacity of ordinary blueberries.
Wild blueberries keep us healthy by maintaining healthy bones, skin health, through collagen and vitamin C, lowering blood pressure and managing diabetes, protecting against heart disease and preventing cancer. They also improve mental health and help with healthy digestion. What a super food!
I’ve added chia seeds to this oatmeal dish for added protein. Chia seeds contain large amounts of fiber and omega-3 fatty acids, plenty of high quality protein, and several essential minerals and antioxidants.

Ingredients:
1/3 cup oats
2 tablespoons chia seeds
3/4 cup nut milk
1/4 cup frozen wild blueberries
Pinch of salt + cinnamon
Zest 1 lemon
Toppings:
Walnuts
Fresh blueberries
Maple syrup
Blueberry jam (no sugar added)
Lemon zest
Add oats, nut milk, chia seeds, frozen wild blueberries, lemon zest and a pinch of salt and cinnamon to pot. Simmer together for about 5 minutes, stirring often. Turn off heat. Add a splash of nut milk for desired consistency.
Top with fresh blueberries, walnuts, and a drizzle of maple syrup. I also add in a swirl of blueberry jam and a little extra lemon zest which really takes this protein and antioxidant packed breakfast bowl to the next level. 🍋🫐
