Quinoa is such a great base for flavor. This protein packed dish is full of flavors with fresh herbs and lots of lemon. It makes the perfect side dish or light lunch. I love this stuffed in avocados myself!
Ingredients:
12 ounces quinoa, cooked
Olive oil
2 cloves of garlic, chopped
Zest of 1 lemon
Juice of 2 lemons
1/4 cup fresh dil, chopped
1/4 cup fresh parsley, chopped
1/4 tsp sea salt
Freshly ground black pepper
Heat olive oil over medium heat. Sauté garlic it until fragrant. Add quinoa to pan. Then add Lemon juice. Once warmed through, turn off heat and add fresh herbs and lemon zest. Finish with salt and pepper and even a little extra drizzle of olive oil.
