Lemon Asparagus with shaved Manchego



I’m sharing the simplest side dish for summer! Seriously full of flavor with so few ingredients it’s barely considered a recipe.


Asparagus is a nutrient packed vegetable. Loaded with vitamins A, C, E and K. It’s also an excellent source of glutathione, a detoxifying compound.


Ingredients:


1 bunch of asparagus

Olive oil

1 lemon, zest and juice

Big pinch of Celtic sea salt

Fresh ground black pepper

Manchego cheese, shaved with a vegetable peeler


Instructions:


Drizzle olive oil in pan and cook asparagus until tender over medium heat. Season with salt and fresh ground black pepper. Zest a lemon right over the asparagus and then add lemon juice. Transfer to a plate and while hot, shave manchego cheese onto the asparagus. Enjoy!
