Chickpea Salad



Sharing the perfect light salad for your next bbq! And it really comes together in minutes - no cooking needed! My favorite summer recipes 😉


Ingredients:


1 jar of chickpeas (cooked, I use Jovial brand)

Juice of 1 lemon

2 celery stalks, diced

1/4 cup red onion, diced

1/3 cup Mayo (or Vegan Mayo)

Big pinch of sea salt

Fresh ground black pepper


Instructions:


Drain chickpeas and pour into a bowl. Squeeze lemon juice over chickpeas. Then mash with a fork. Add diced celery, onion and mayo and mix together. Season with salt and pepper and stir. Serve on your favorite sourdough or a lettuce cup. Use fresh veggies and crackers for dipping!
