This beautiful arugula salad is one of my favorite fall salads. The peppery arugula with the bite of the Manchego and the crisp apples really pairs nicely together. Top it with pomegranate seeds and maple pecans... I could eat it almost everyday!
- Arugula - Shaved Manchego cheese - Thinly sliced apples (something like honey crisp) - Maple pecans (toasted pecans are great here as well) - Pomegranate seeds
Dressing: - Juice from one blood orange - Good olive oil - Drizzle of real maple syrup - 1/4 teaspoon Dijon - Salt + pepper
